When i saw these photographs by pablo arroyo I immediately thought back to the big pig-slaughter and the subsequent feast we had a couple weeks ago. . . We made meatballs using the lace-like pig fat that holds their stomach in (or something like that). . . We wrapped the meatballs with it and then baked them. . . can't get much more back to the earth than that.
